Brunch : Artichoke Frittata
Artichoke Frittata
COOKING TIME: 15 MinutesSERVING SIZE: Yields 4 servings
Ingredients
- 1/2 tsp Isola Extra Virgin Olive Oil
- 3 eggs beaten
- 2 oz Isola Bufala Mozzarella Cheese sliced
- Pepper to taste
- 1 8oz jar artichoke hearts drained
Preparation Instructions
- Heat olive oil in a 9 inch pan. Briefly saute the artichoke hearts.
- In a bowl mix beaten eggs, cheese, pepper and artichokes. Reheat pan add mixture and cook over med-low heat about 8 minutes.
- If you do not have a Frittata pan, place under broiler for 2 minutes to finish top of Frittata. If using a Frittata pan flip to cook other side for 2 minutes.
- Place plate over pan to flip Frittata onto serving dish.
- Garnish with tomato sauce fresh basil sliced tomato and cheese.
