Chicken and Penne with Mozzarella Casserole

Ingredients
- 3 cloves crushed garlic
- 1/4 cup My Brothers Olive Oil
- 1/2 - 1 lbs boneless chicken breast
- 1- 28 oz can Isola Italian Peeled Tomatoes
- 4 oz sliced and drained mushrooms
- 1/2 lb mozzarella cheese
- salt and pepper to taste
- 1 lb Isola Penne Rigate pasta
- 4 oz sliced and drained mushrooms
Preparation Instructions
- Sauté garlic in hot olive oil. Add chicken to garlic and olive oil and sauté three minutes on each side.
- In separate pot, cook penne al' dente, drain.
- In mixing bowl combine tomatoes and mushrooms. Salt and pepper to taste.
- In casserole dish add chicken sauté tomato mixture and penne. Top with mozzarella cheese and bake in oven on 325 degrees for 20 minutes.
