Red Snapper con Marsala and Parmigiano Reggiano

Ingredients
- 1 small yellow onion chopped
- 1 - 14oz can Cherry Isola Tomatoes
- 1 lb Red Snapper
- 6 tbsp Isola My Brother's Olive Oil
- 1/2 cup Marsala
- 1/4 lb Grated Parmigiano Reggiano
- 1 Tablespoon of Capers
- 1 Stalk of Zucchini
Preparation Instructions
- Sauté onion and Zucchini in My Brother's Olive Oil.
- Add Marsala wine cook for 3 minutes then fold in Tomatoes. Cook for 5 minutes.
- Add Red Snapper to mix and saute till opaque color.
- Finish off by adding the grated Parmigiano Reggiano and capers to top of fish and cook for 2 minutes.
- Take off of heat drizzle with My Brother's Oil and serve.
