Gourmet Meals : Seafood Salad Paella
Seafood Salad Paella

Ingredients
- 1 Tablespoon of My Brother's Olive Oil
- 1 chopped red onion
- 3 cups of Isola Arborio Rice
- 1 can of Isola Cherry Tomatoes 14oz
- 1 tsp of minced garlic
- 1 tsp of paprika
- 1/2 lemon
- 2 tablespoons of dry white wine
- 1 package of Isola Seafood Salad
- 3 1/2 cups of chicken broth or seafood broth
- chopped parsley
- 1/2 cup of Isola Pitted Kalamata Olives
- 1/2 a chopped red pepper
- 1/2 cup of peas
- 1 tsp of saffron
- salt to taste
Preparation Instructions
- In a large frying pan add olive oil and onion then let it soften.
- Add in the rice, paprika, saffron and then stir it all together before adding in the wine.
- Next stir in the tomato, peas and chicken stock to the pan and let cook for 15 minutes.
- When the rice is soften add in the seafood, peppers, olives and let cook for three minutes.
- Finish the dish off with by squeezing the lemon over it and scattering the parsley.
